It looks like this has been the summer of desserts over here at Sweet Treats & More. Believe me, we don’t just eat cake and cookies every day. Although, I probably would if I could get away with it.
But see, we each spinach and snacky stuff. And look….sweet potatoes too!

Yes please!

I love how fresh and simple summer dinners are. This really kicks it up a bit. I’ll be trying this for sure.

I’ve never thought to try the cilantro lime combination with sweet potatoes before, it sounds delicious! Especially on sweet potato fries!
These are so colorful and pretty! I love the idea of tart lime with sweet sweet potatoes. Yum!
Pin to my board #Yummilicious , thanks for the recipe . gonna try it soon
Just tried this tonight and it was absolutely delicious. My husband and son do not like sweet potatoes but actually gave this a thumbs up! My only change will be to use less salt, but I plan to make this regularly this summer! Thanks!
These were yummy! But the skins fell off! Any suggestions for making them stay on? Thanks!
Oh dang, I’ve never had that happen!! I’m not sure what to do to prevent it?? I love the skins because they get nice and crunchy!
Do you eat the skins?
Just made this for dinner tonight. It was SO GOOD! My husband said this is definitely one to make again. I think I will make this for an upcoming camping trip, but boil the sweet potatoes before leaving home. I can hen finish them up on the grill when we get there. Thanks for the great recipe!
This is brilliant. Great flavors!
I love the simplicity of this! And we’re huge sweet potato lovers too!
omg, this is the silliest recipe, lol.
I’m definately gonna try these! I love cilantro so much I even put it on fresh strawberries.
Made these last night…so delicious and refreshing. Paired perfectly with steak 🙂 Thanks for such a great idea. We’ll definitely be making them again!
If you cook them to fork tender they fall apart before getting them on the grill.
I wouldn’t recommend boiling the potatoes. I would par-bake them. The skins won’t fall off and they won’t fall apart. That’s the only thing I would change about this recipe. I would wait for them to cool completely before sticking them on the grill too.
Thanks Susan!!
Make this last night with my husband, came out amazing! yummy
So glad you liked it!!
