The boys love it when I make muffins in the morning, but trying to do it before school is usually way too crazy. Unless of course I’m up reaaaaaal early. Or everybody is. And for some reason everyone was up today, so I some extra time to make these Healthier Blueberry Muffins before school. These are made with whole wheat flour, oats, and coconut oil, and not loaded with lots of sugar!
The boys love them–even Miles who hates chunks of things in his food. I used to be just like him, hated chunks of fruit in breads and muffins, even yogurt. So I guess I can’t blame him. But surprisingly he really likes blueberries–he calls them his Power Berries, so naturally these muffins are his Power Berry Muffins now:)
I love the subtle sweetness from a little brown sugar + the natural sweetness of the berries. And I think you all know I love using coconut oil in baking for texture + flavor. Hopefully you like them too!

Healthier Blueberry Muffins

Ingredients
- 1 cup rolled oats
- 1 1/2 c. whole wheat flour
- 1/2 c. packed brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 large egg, room temp
- 1 c. low fat milk
- 1/4 cup + 1 tbsp coconut oil, melted and slightly cooled.
- 1 tsp pure vanilla extract
- 2 cups fresh or frozen blueberries
Instructions
- Preheat oven to 400.
- Place oats in a blender or food processor and blend until ground up.
- Combine oats, flour, brown sugar, baking soda, baking powder, and salt in a medium bowl.
- Melt coconut oil in a small bowl. Let cool for a few minutes. Whisk in egg, vanilla, and milk.
- Pour wet ingredients into the dry ingredients and stir until combined. Gently fold in blueberries.
- Fill a muffin tin (lined or greased) 3/4 full.
- Bake for 20 minutes or until a toothpick inserted comes out clean

Ok, novice baker question. If using frozen blueberries, do you thaw the blueberries first?

@ Jody, Any time I’ve used frozen blueberries I’ve just used them frozen and they turn out fine!!
