You guys know how I feel about my carbs, especially bread. This Herb-Parmesan Flatbread is my new best friend. Goes great alongside a healthy salad or soup!
Herb-Parmesan Whole Wheat Flatbread
Ingredients
1 c. warm water (105-115 degrees F)
1 Tbsp sugar
1 package active dry yeast (or 2 1/4 tsp)
2 Tbsp olive oil
2 c bread flour
1 c whole wheat flour
1 1/2 tsp salt
1/4 c grated Parmesan
1 Tbsp chopped fresh rosemary
1 egg white, beaten
Instructions
Mix water, sugar, and yeast in bowl; let stand until foamy, 5 minutes. Stir in oil, flours, and salt with wooden spoon until dough starts to gather around spoon. Turn dough onto lightly floured surface; knead until smooth and elastic, 8-10 minutes.
Spray large bowl with nonstick spray; add dough. Spray dough with nostick spray and turn to coat. Cover bowl loosely with plastic wrap and let rise in warm spot until doubled in size, about 45 minutes.
Meanwhile, preheat oven to 475 degrees. Spray heavy 10 x 15-inch jelly-roll pan with nonstick spray.
Punch down dough. Place dough in pan; press with fingertips to cover bottom of pan. Dimple top of dough with handle of wooden spoon and 1 1/2-inch intervals.
Combine Parmesan cheese and rosemary in a small bowl. Brush top of dough evenly with beaten egg white, then sprinkle evenly with cheese mixture. Bake until goden brown, about 15 minutes. Transfer flatbread to rack and let cool slightly. Transfer to cutting board and cut into 16 rectangles. Serve warm or at room temperature.
