I saw this Holiday Granola over at Yummy Mummy a couple of weeks ago and couldn’t wait to try it.
I’ve been eating it non-stop sprinkled over a big bowl of greek yogurt!
(Granola is healthy and so is greek yogurt so it’s all good;))
I might have slightly over baked mine, so the bright green pistachios you should be seeing came out a golden brown color and kind of just blend in with the rest of it. But they are there, and they are tasty!

Holiday Granola with Cranberries and Pistachios
Ingredients
3 cups rolled oats
1/2 cup shelled pistachios
1 teaspoon freshly grated nutmeg (I just used regular ground nutmeg)
1/2 teaspoon salt
1/4 cup brown sugar
1/4 cup maple syrup
2 tbs vegetable oil
1/2 cup dried cranberries
Instructions
Preheat oven to 275 degrees.
In a medium bowl combine the rolled oats with pistachios, nutmeg, salt and brown sugar. Next stir in the maple and oil and mix until combined.
On a lightly greased baking sheet spread the granola out evenly in a single layer. Bake for 45 minutes to 1 hour, stirring every 20 minutes. Let granola cool completely then stir in dried cranberries. Enjoy!
