I hope you all had a great Thanksgiving weekend. Ours was pretty laid back, and pretty cold. Thanksgiving morning we ran in our neighborhood Turkey Trot. 8:30am in 10 degree weather. We froze our butts off.
We spent the rest of the day at my husband’s Aunt and Uncle’s house with extended family. I ate the most amazing turkey I’ve ever tasted. Apparently it had been brining since Tuesday. If I ever muster up the courage to cook up a Turkey I’m going straight to Brett’s Aunt for help. Somehow this year, I didn’t eat one slice of pie. I got my sugar fix loading up on sweet potatoes, jello salad, caramel bugles, and diet coke:)
Friday Brett had to work and I had a teething, cranky baby so I didn’t really do any Black Friday shopping. My only purchase was two take-n-bake pizzas from Papa Murphy’s. They were having a Black Friday special for all those crazy shoppers that would be too exhausted to make dinner that night. It was one deal I couldn’t pass up 😉
The rest of the weekend was cold and snowy. We stayed inside, curled up in blankets watching football and several seasons of Heroes. And I spent a good chunk of time browsing recipes and compiling a holiday baking list.
But until the baking begins, here is a soup perfect for cold, snowy weekends like we had here. If you’ve got leftover turkey to get rid of, you can use it in stead of the chicken.
Crockpot Chicken (or Turkey) Enchilada Soup
Crock Pot Chicken Enchilada Soup
Ingredients
2 c. chicken broth
1 c. enchilada sauce (I use this)
1/4 c. sour cream
1 (16oz) can diced tomato
1 (4 oz) can diced green chili
1 can black beans, drained
1 cup frozen corn
1/2 tsp salt
1/2 tsp cumin
1/4 tsp pepper
4 boneless skinless chicken tenders (2 breasts OR abt 2 cups shredded turkey)
4 corn tortillas
Instructions
Place everything but the tortillas in the crock pot, stir together, and cook on high for about 3 hours (or low for 6-8 hours).
Shred corn tortillas into small squares and stir into soup 5-10 minutes before serving. Garnish with cheese, avocado, and additional sour cream if desired.
