You have to make this dressing. It’s kind of like that amazing, crazy-good-and-addicting Creamy Tomatillo dressing from Cafe Rio. Yeah, that stuff’s so good I want to drink it. But this Jalapeño Blue Cheese Dressing is a little different. It’s super simple and made with jalapeño, cilantro, lime juice and blue cheese. And yogurt (plus a little olive oil), so it’s totally healthy. Pour it on everything, EVERYTHING, and don’t feel guilty about it mmmkay?
Dip your veggies in it, pour it on salads, on your fav mexican dishes, or even some buffalo wings. Oh yeah, buffalo wings would be amazing. You could even douse a burger in it (oh my gosh I’m so making burgers this weekend!) The blue cheese gives it such a different flavor, you’ll love it. We love it.
Yesterday, I threw this make-shift salad together at 3pm and called it lunch. Romaine lettuce, crunchy sesame chips, crumbled up black bean burger, and sliced avocado , drizzled with this dressing. Best make-shift lunch I’ve had in a while.

A little sneak peek for ya…..
- 1 jalapeño, stem and seeds removed
- 4 oz blue cheese
- 1/2 cup chopped cilantro
- 1/2 tsp minced garlic
- 1/2 lime, juiced
- 1 cup greek or plain, nonfat yogurt
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
- Place everything in a blender or food processor and blend until smooth.
