Happy Tuesday guys! I meant to get this post up yesterday so you could all whip ’em out these KEY LIME PIE ENERGY BITES for the week!
They taste like the tropical vacation I’m dreaming of (one I won’t be going on anytime soon- ha-but it’s first on our list when we feel like we can leave the babies and ALL FIVE OF OUR CHILDREN. Who signs up for that? Kidding. Kind of)!
These babies are the perfect afternoon snack that gives me a little energy while satisfying my sweet tooth! I know I’ve said it before, but breastfeeding this time around has me hungry all the time and craving all the sweets. Breastfeeding for two has to be it? Right?
These are made with oats, almond butter, Vital Proteins Vanilla Collagen Peptides, a splash of almond extract, fresh squeezed juice (and a little zest) from key limes, and a little honey! (We just happen to have a key lime tree in our backyard and it’s kind of the best thing ever). I definitely recommend using a vanilla flavored protein powder if you don’t have the Vanilla Collagen, I love getting a little boost of collagen in with these bites though. Collagen has changed my skin!
I like having these and a batch of Clean Eats & Treats Powerballs in my freezer to get me through a couple of weeks. You absolutely have to try Shannon’s powerballs too…they taste like peanut butter cookie dough!
Key Lime Pie Energy Bites
Ingredients
2 cups oats, ground up (pulse in food processor a few times)
2/3 cup almond butter (drippy kind)
1 tbsp chia seeds
2 scoops Vital Proteins Vanilla Collagen (or 1 serving of vanilla protein powder of choice)
1/4 tsp almond extract
2 tbs lime juice
1 tbs lime zest
1/3 cup honey
Instructions
Place everything into the bowl of your stand mixer and mix together until it forms a dough-like texture and is easy to roll into balls! Roll into one inch balls, then roll each ball in a little lime zest. Store in an air tight container in the fridge!
