I’ve never been a huge fan of cucumbers. In fact, they used to make me gag. Something about their texture and lack of flavor. I still don’t understand how people eat them plain.
I have however, discovered a few ways to eat cucumbers that I actually really like. For starters, the cucumbers always have to be crisp and thickly sliced…..
1) Cucumbers doused drizzled with ranch and sprinkled with sunflower seeds. This is my favorite thing to do at restaurants with salad bars!
2) Pickled cucumbers. Sliced cucumbers + thinly sliced onions soaked in vinegar + water + a little salt and pepper. I love the sour/bitter taste of these!
3) Lime Cucumbers. Fresh lime juice squeezed over the top of sliced cucumbers + a dash of salt. One of the most refreshing summer snacks. I love the tangy lime flavor!
I’ve been eating a lot of this last one, the lime cucumbers, lately. An old roommate introduced me to them years ago and then my mother-in-law got me hooked again while I was in Colorado. I just can’t get enough of the tangy lime and salt flavor.
And so they inspired these Lime Cucumber & Watermelon Kabobs.
My husband bought a rediculously large watermelon last week. We’ve practically been eating watermelon with every meal trying to eat it all before it goes bad. So take that, in combination with my lime-cucumber obsession, and these little kabobs were born.
You get sweet and tangy and salty all in one little Kabob.
