With that other big, giant zucchini I snagged from our neighborhood crop drop, I made some zucchini cookies as well as some delicious zucchini bread. And I’m sharing both recipes today!
You’ll be happy to know both are on the healthier side. This Low-Fat Chocolate Chip Zucchini Bread is from Skinny Taste (love this site). You will love how perfectly moist and flavorful this bread is!
And these Oatmeal Chocolate Chip Zucchini Cookies are thick and soft, and cake-like. Exactly how I love my oatmeal cookies.
So if you’ve got absolutely nothing to do this weekend and have some extra zucchini on your hands, make some bread. Then make some cookies. Then eat it all!

Low-Fat Chocolate Chip Zucchini Bread
Ingredients
1 cup all purpose flour
1 cup white whole wheat flour (regular whole wheat flour works)
1/2 cup brown sugar (not packed)
1 -1/8 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/2 cup chocolate chips
1 large egg, beaten
2 tbs melted butter
1 cup apple sauce
1-1/2 cups shredded zucchini (not packed)
Instructions
Preheat oven to 325.
Combine flour, sugar, baking soda, and salt in a large bowl. Mix well. Add chocolate chips and gently mix to combine.
In a medium bowl, mix egg, vanilla, melted butter, apple sauce and zucchini. Add to the flour mixture and stir until just blended.
Pour batter into a large 9X5 in loaf pan.
Bake at 325 for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes. Remove from loaf pan and let it cool before slicing.

Oatmeal Chocolate Chip Zucchini Cookies
Ingredients
2/3 c butter, room temp
2/3 c brown sugar
1 egg
1 tsp vanilla extract
1 c shredded zucchini
1/2 c wheat flour
1/2 c white flour
1/2 tsp baking soda
pinch of salt
1 c oats
1/2 c milk chocolate chips
Instructions
Preheat oven to 375.
In a medium bowl combine flours, baking soda, salt, and oats and set aside.
In a mixing bowl beat butter and brown sugar until well combined. Beat in egg and vanilla extract, then stir in shredded zucchini.
Stir flour-oat mixture into the wet ingredients and mix until combined. Stir in chocolate chips.
Place rounded spoonfuls on a baking sheet lined with parchment paper. Bake for 8 minutes at 375. Let cool for a few minutes before transferring to a wire rack.
