So on Sunday I turned 30. GASP! I know, I just look so much younger, right? I might be a little more devastated {or down-right depressed} about turning 30, but I celebrated my birthday in St. Thomas lounging on the beach with my husband and some of our good friends! We’re vacationing on a cruise in the Southern Caribbean for the next six days! Pinch me.
I hear dark chocolate cake with dark chocolate frosting and Oreo chunks on top makes you look younger. So let’s eat cake!
I actually made this cake last week for a dessert night we had with friends. I always feel the pressure to impress when it comes to dessert. But you know me, I keep things pretty simple too. The cake and frosting recipe is Hershey’s Especially Dark Chocolate Cake recipe, I just changed up a few things– like adding Oreos. And chocolate chips. And I used cake flour to get an extra fluffy cake. It’s so flufffffy!
I tried so hard to just have a bite, but one bite turned into ten. I’m pretty sure I ate two pieces of it. You know me and dark chocolate:)
All of the dark chocolate led me to call this a Midnight Oreo Cake. It sounded fitting, and fun. It is also fun to eat at midnight. Might be guilty of that one.
- 1 3/4 cups cake flour (regular flour fine too)
- 3/4 cups Hershey's Special Dark Cocoa
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups sugar
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 cup milk
- 1 cup boiling water
- 1 cup mini semi-sweet chocolate chips
- 1 1/2 cups crushed Oreos
- 1/2 cup butter, melted
- 2/3 cup Hershey's Special Dark Cocoa
- 3 cups powdered sugar
- 1/3 cup milk
- 1 tsp vanilla extract
- For the cake: Preheat oven to 350. Lightly grease a 9 X 13 inch pan and set aside.
- In a large bowl or bowl of a stand mixer, combine flour, sugar, baking soda, baking powder, and salt. In a small pot, bring 1 1/4 cup water to a boil. (boiling extra in case some evaporates-you will only need one cup!)
- Add eggs, vanilla, milk ,and oil and beat together or about two minutes. Stir in 1 cup of the boiling water with a wooden spoon until incorporated. The batter will be very thin. Pour batter into the prepared 9 X 13 inch pan and bake for 30-35 minutes (until a toothpick inserted comes out clean).
- Beat butter and cocoa together. Alternately add powdered sugar and milk, slowly beating until smooth and creamy. Add vanilla and beat for another 30 seconds. Spread over cooled dark chocolate cake. Cover with crushed Oreos and mini chocolate chips.

In the frosting recipe it says 1/2 butter?? Is that 1/2 stick, or 1/2 cup?

Making this right now. The instructions did not mention the cocoa powder in the cake part. I knew to add it to the dry ingredients. Just thought I would share :). Can’t wait to try this after dinner tonight!!
