I have loved summer and not needing to rush anywhere in the mornings! The boys are usually up early (okay, always up early–one day they will sleep in right?) but we’ve been able to take our time with breakfast, watch a morning show, and lay around in our pj’s for a while before getting ready and heading out the door. I cringe a little thinking about mornings before school and how rushed they can feel. So I’m making it a goal to have lunches and backpacks packed the night before, and have breakfast ready when the boys wake up {because they are staarrving and whiny the second they wake up too!}
Planning out a weekly breakfast menu (just Monday-Friday) is something I’ve decided to do this year. I’ll let the boys help plan it- if they’re involved in the planning then there’s no whining/complaining come breakfast time. 🙂 I like to keep things simple, quick and healthy in the mornings so creating a quick menu will be a breeze. (I usually save the fun stuff-like French toast, crepes and waffles for the weekends or special holidays!) The boys love oatmeal, smoothies, scrambled eggs, toast or bagels, and lately breakfast burritos. Hopefully having a plan for breakfast each day will take a little bit of the rush out of the mornings before school. Waking up just a few minutes before them to prep it will be key too!
The boys are really into smoothies in the morning so I like them to have one with whatever else they are eating that’s a little more substantial- like breakfast burritos. The goal is to pack in some extra fruits/veggies + nutrients to keep them full until lunchtime, ya know?
One of our favorite smoothies right now is this Morning Mango Smoothie. It’s full of mango, orange, banana, Greek yogurt, and sweetened with a hint of honey. SO good + the boys love it! I like to either buy the mango pre-sliced or use frozen mango chunks–either way I just don’t have time to cut up a mango in the morning before school- 1) I’m terrible at it and 2) I’m lazy.????
And because I’m lazy, I like having a few breakfast items I can pull from the freezer and cook and serve in minutes too. Sometimes I make a big batch of pancakes or waffles, or energy bites. And sometimes I just use frozen burritos. 🙂 The boys had their smoothies with El Monterey breakfast burritos the other day and loved the combo. And it actually kept them full until lunch. I’ve said it before, but I love that El Monterey’s products are made with REAL ingredients– cheddar cheese, real scrambled eggs and fresh-baked tortillas. Their breakfast burritos are the perfect size for kiddos, too.

Cheers to a new school year! What are some of your quick breakfasts go-tos for kiddos? How do you keep your mornings calm and not feeling so rushed before school??!
- 1 cup mango slices (peeled)
- 1 cup vanilla Greek yogurt
- 1 medium orange, peeled
- 1 frozen banana
- 1 tsp vanilla extract
- 1 tbsp honey
- handful of ice cubes
- Place everything in a blender and blend until completely smooth, no chunks.
- The whole orange usually provides enough liquid for me but if you need to add a little bit of milk to get the desired texture!
