These little Gingersnap Snowballs are a quick and easy treat to make up for your friends and neighbors or bring to a Holiday party this Christmas Season. We are talking four ingredients kind of easy. Gingersnap cookies, peanut butter, honey, and powdered sugar.
I saw these in a little Christmas Cookie magazine at the grocery store last week. I was browsing Christmas cookies while I did my grocery shopping–which turns out is highly counter-productive and makes for a long shopping trip. But I quickly jotted this one down because I love finding new quick and easy, no bake treats to make during this busy season.
The original recipe used corn syrup, so I made a batch with corn syrup and one with honey. They both taste good so you can use either.
No Bake Gingersnap Snowball Cookies
Ingredients
20 Gingersnap cookies
3 tbs honey or dark corn syrup
2 tbs peanut butter
1/3 cup powdered sugar for rolling
Instructions
Place cookies in a food processor and pulse several times until all the big chunks are gone. (You could also place cookies in a zip lock back and roll a rolling pin over cookies until crushed.
Stir in honey and peanut butter. You might want to use your hands to mix everything together–it gets sticky!
Roll into 1 inch balls then roll each ball in powdered sugar, coating evenly. Store in air-tight container.

I have some Gluten Free Ginger Snaps from Trader Joes that I’ve been holding onto. If I open the bag I am likely to eat them all… but, I can eat a few and then make these (or make these and eat a few of these;) for a cookie exchange. Thanks so much for a great recipe that I can easily adapt to our dietary needs!
