Just wanted to share these quick and easy chicken tenders before I leave for Arizona in the morning. I’m somewhat disappointed that rain is in the forecast for our race this weekend. I’m in serious need of sunshine. Fingers crossed the weather gods show me some love.
I kind of really like love deep fried chicken tenders. However, I don’t love where all that grease goes (straight to the hips) so sometimes I opt to making them at home, the not so deep fried way. Nothing will ever trump Chick-Filet’s chicken tenders {us Utah folk are crazy ’bout Chick-Filet} but they satisfy the all-too-frequent craving. And they are so. so. easy to make.
Oat and Pecan Crusted Chicken Tenders
In a food processor grind 1 cup of oats and 1/2 cup of pecans. Pour into a bowl and mix in a few seasonings.
Spray each chicken tender with Pam and roll in the oat-pecan mixture.
Bake at 450 degrees for 15-20 minutes on a greased baking sheet (rotating chicken once).
Easy-peasy and not so greasy.

1 tsp pepper
1 tsp thyme + 1 tsp oregano + 1/2 tsp crushed red pepper
6 chicken breast tenderloins, thawed
Instructions
In a food processor grind the oats and pecans. Dump into a bowl and stir in seasonings.
Spray each chicken tender with Pam then roll into the oat-pecan mixture.
Place on a greased baking sheet and cook for 15-20 minutes at 450 degrees. Rotate the chicken once while cooking.
Serve with honey or barbeque sauce for dipping.

I worked in Utah for a summer, and it was a whole new experience for this Coloradoan. Utah is a haven for so many different kinds of “fast” food! I couldn’t believe. I almost felt like it was a melting pot in that sense. It had all of my Colorado favorites (such as Chiptole and Noodles & Co.) but also some new ones I had never heard of before. And when I went into Chik-Filet it was chaos!

I love making baked chicken. It’s so easy and since I don’y really like the grease from deep frying, you can get a nice crunch without the deep frying part! 🙂 Recipe looks nice, I’ll have to try it sometime.
