I made these Oatmeal Banana Zucchini Bars on Sunday afternoon and the boys loved them so much I made them again yesterday! They’re perfect for breakfast or to pack for their morning snack at school. The entire pan will only last just a couple of days around here….next time I need to double it!
These are pretty healthy with zero refined sugar and no flour, just oats! They’re thick and dense….and I hate to say it, but moist. And subtly sweet– which is just how I like them.
All you need to make them is one banana, one zucchini, one egg, ground oats, honey, coconut oil, baking soda, cinnamon and a pinch of salt! That’s really it! Simple ingredients and simple to make.
These are great for breakfast when they’re warm, right out of the oven. Drizzle with a little honey, spread a little peanut butter on them, or just enjoy plain.
Anything baked with zucchini makes me think of summer….who’s ready? I think I’m ready! Bring on summer!
Oatmeal Banana Zucchini Bars
Ingredients
2 cups oats, ground up (use food processor or blender)
1 egg
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
pinch of salt
1 banana, mashed
1 zucchini, shredded (wring out excess liquid)
1/3 cup high quality honey
1/4 cup coconut oil, melted
Instructions
Preheat oven to 350. Lightly grease an 8X8 inch pan.
In a mixing bowl combine the mashed banana and zucchini. Stir in egg, vanilla, honey, salt, cinnamon, baking soda and oats. Lastly stir in melted coconut oil. Pour into the prepared pan and bake for 20-25 minutes or until the top is just barely golden (do not over bake).
Cut into squares and serve with a drizzle of honey!
