Nothings says spring and sunshine like these Orange Kissed Pancakes. Unfortunately the last few days here have been a bit of a doozy–dark, cold, and cloudy (I told you Utah weather is unpredictable.) So I’m wishing the warm weather back with these bright and cheery pancakes. And really hoping they do the trick!
These are from a cook book I’ve had hiding in my cupboard for over a year and finally made something out of. Probably because it’s a book full of breakfast recipes, 101 breakfast recipes in fact, and I’m just not big in to breakfast. But every once and a while, I’ll take a good serving of pancakes and after trying these they might just make an appearance more often.
“Kissed” is the perfect way to describe the touch of orange flavor these have. Definitely present, but subtle. Just a simple pancake recipe infused with orange juice. Then I drenched them in a warm Buttery-Orange Glaze to amp up the orange flavor.
Citrus scented and hot off the griddle, covered in this warm glaze, these ‘cakes are pretty much perfection. I feel the sunshine ‘a comin’….
- 1 egg
- 2 tbsp butter, melted
- 1 cup orange juice
- 1 cup flour
- 2 tsp baking powder
- 1 tbsp sugar
- 1/2 tsp salt
- Preheat a large skillet or griddle over medium heat and spray with cooking spray.
- In a blender, combine the egg, butter and orange juice and blend on high for 20-30 seconds.
- Add the flour, baking powder, sugar and salt and blend again for another 20 seconds (or until smooth).
- Pour batter batter 1/4 cup at a time. Cook for 3-4 minutes or until bottoms are slightly golden and tops start to bubble. Flip pancakes and cook for another 2-3 minutes until the other sides slightly golden as well.
- Serve warm with Butter-Orange Glaze (recipe below)
- 1/2 cup powdered sugar
- 1 tbsp butter
- 2-3 tablespoons orange juice
- Melt the butter and orange juice together in a microwave safe bowl. Slowly whisk in powdered sugar until creamy. Pour over pancakes and serve.
- * Add more or less powdered sugar and oj to desired consistency and orange flavor!

I like the idea if using orange juice instead of milk or water! I bet these are delicious- citrus is always a win. I might need some too as we have cloudy skies, wet sidewalks, and cold temperatures!
