We welcomed our sweet baby boy Graham to our family last Monday. Hi friends!! I’m Carrian from Oh, Sweet Basil and I am so excited to be on Kristy’s site sharing one of our favorite recipes, peaches n cream crumb muffins. They are so easy to make (hip hooray!!) and just lovely muffins. That crumb topping is so tempting, right?
Anyway, I’m here today because as Kristy is one of my best friends I insisted she let me help out with a recipe on her site so she could have a little time to rest. I only have two kids and they already make me tired so I can only imagine 3, especially 3 boys. I hear they have more energy than girls, which is what I have. Though I have to throw this out there, yes mom’s to little boys may do a little more running around than us with girls but give it a few years and I bet those of us with girls will be dealing with teenage emotions which will totally smash the busyness of a toddler boy. Right? Or maybe not, but it’s certainly got me nervous. Either way, I know muffins would make anyone feel better and I wish I was delivering some to Kristy right now. In fact, we make them, freeze them and then pop them in the microwave whenever I need the kids to eat something for breakfast that I didn’t have to slave over.
But back to K, she’s the best and I’ve been just hating that we aren’t neighbors now that they live in California. I’d tell her to come back to Utah, but in all honesty I think we would rather head off to California and get in a little beach time. When I had my second I was so tired and she was NOT a sleeper. In fact, she never slept and it took us months to figure out what was going on. I had a friend that would just pop in and take our oldest without letting me say a word about it and I can’t tell you how much it helped. I wish I could do that for you, Kristy. I’d be there in a heartbeat to give you a little time for a shower or to take a nap. You’re the best person I know to raise 3 darling boys and I cannot wait to get to know this new love that is clearly meant for you. Love you! Enjoy these muffins from me!
- 1 3/4 cup flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/3 cup softened butter
- 2 large eggs
- 2/3 cup sugar
- 1 cup peach puree *I stick a couple of peaches, peeled, in the blender
- Topping
- 3/4 cup flour
- 3/4 cup sugar
- 4 tablespoons cold, unsalted butter
- Heat the oven to 375 degrees. Spray a muffin tin with non stick spray.
- In a small bowl, mix the flour and sugar and then using a fork or pastry cutter, cut in the butter.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt. Set aside. In a standing mixer, mix the butter, sugar, eggs until smooth. Add the flour a little at a time alternating with the peach puree. Scoop out into the muffin tin filling about 2/3 full. Sprinkle with the topping and bake for 15-20 minutes or 25-30 minutes for jumbo muffins.
