It’s peach season it Utah and we just picked up our first 20 pound box over the weekend. In just a few days we’ve stuffed our faces with peach-everything. This Peach, Chicken and Gouda Cheese Quesadilla has quickly become one of our favorites. It’s quick and easy and great for lunch or dinner….especially if you’re like me, and have been totally lazy with dinners this summer.
Why on earth I’ve never really used Gouda cheese in a quesadilla before is beyond me. I love its buttery flavor and melted together with juicy chunks of peaches and chicken just hits it out of the ball park.
Seriously folks.
I think I’ll go make one for breakfast….
Peach Chicken & Gouda Cheese Quesadillas
Ingredients
2 whole wheat tortillas
1 large peach, pitted and diced with skin removed
1/2 cup shredded chicken
Gouda cheese (I used about 1 1/2 slices per quesadilla)
Instructions
Heat large cooking pan over medium heat. Place tortilla in pan and cover with Gouda cheese, half of the diced peaches and half of the chicken. Cook until tortilla is golden brown and cheese is melted, fold tortilla over and serve. Repeat with second tortilla and remaining cheese, chicken and peaches

Hi Kristy! These quesadillas look fabulous. I always like to spruce up my quesadillas and grilled cheeses with different cheese- like brie or gouda. It makes me feel fancy.. PLUS they taste so much better. Peaches are my #1 fruit too. You can imagine how much I’m loving this recipe today ๐
