Last week Brett and I decided we were going to eat really healthy. Those Skinny Tuna Melts were about as far as I got. {They were delicious!} But I made these cookies over the weekend and you can just imagine my husband’s excitement to have them lying around the house. I think sometimes he thinks I am trying to sabotage him…bring him right down with me. But this girl just can’t go more than a day without some chocolate….and apparently some peanut butter and some Oreos. But Brett’s always had better self control than me, and I think he only ate like one and a half cookies. So I don’t feel so bad.
As for me? Oh mercy damage was done. And I ate waaaay too much dough.
But, you know how much I love peanut butter.
You know how much I love dark chocolate.
And well, who doesn’t love Oreos?
I couldn’t stop myself.
Running 9 miles Saturday morning justified my indulgent behavior (benefits to half marathon training, right?;)). Ten- too-many-cookies later, I pawned the rest off on some friends– the best and worst thing I could’ve done.
Must. make. more.
- 1 cup butter, soft
- 3/4 c. granulated sugar
- 3/4 c. brown sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 cup peanut butter
- 2 1/3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 12-15 Oreos, crushed
- 1 1/2 c. dark chocolate chips
- Preheat oven to 350.
- In a medium bowl, mix flour, salt, and baking soda together and set aside.
- In the bowl of a stand mixer, beat butter, sugars, and vanilla together until creamy. Beat in eggs one at a time, beating well after each addition.
- Next mix in peanut butter until evenly combined.
- Gradually beat in the flour mixture. Gently stir in oreo chunks and dark chocolate chips.
- **Let dough chill for 1 hour
- Using a cookie scooper, place dough onto a baking sheet lined with parchment paper. (I do fairly large scoops). Bake for 8-9 minutes. Let cool for 2-3 minutes then transfer to cooling rack and finish cooling
