We loved this peanut butter chocolate fudge so much I decided we needed another version, with oats. And more peanut butter:) It’s been our go-to treat lately. And it’s healthy…
When I say “healthy” I don’t necessarily mean low calorie, or eat as many as you want. Mmkay? Even though that’s what usually happens here. They disappear in days. What I mean though, is that these perfect Peanut Butter Oatmeal Fudge Bites are made with healthier, better-for- you, all-natural ingredients. That, in combination with their small, bite-sized nature mandates them a healthy, guilt-free little treat. Got it?

That right there is purely oats, honey, all-natural peanut butter, coconut oil, and a little vanilla extract, getting a thin layer of chocolate fudge over the top. Isn’t it purrrty? The chocolate fudge is made of cocoa, honey, coconut oil, and vanilla. See, told ya–better for you ingredients.
And bite-sized fudgy perfection.
- 2/3 cup local, good quality honey
- 1/3 cup all natural peanut butter
- 1 tsp vanilla
- 1 tbsp coconut oil
- 2 cups old fashioned oats
- pinch of salt
- 3 tbsp cocoa powder
- 3 tbsp honey
- 3 tbsp coconut oil
- 1 tsp vanilla
- In a small sauce pan melt honey, peanut butter, coconut oil, vanilla and salt together over medium low heat until completely melted. Stir in oats. Press into a parchment lined bread pan and set aside.
- In another small sauce pan melt cocoa powder, honey, coconut oil and vanilla together over medium heat until just starts to simmer. Remove from heat and pour over the oatmeal layer, spreading evenly over the top (it's a thin layer). Refrigerate for 1-2 hours until set (or quick chill in the freezer for 30-40 mins). Cut into squares and serve. Store in air-tight container and keep refrigerated.
- I like to let mine set out for a few minutes before eating to soften a little bit.

You would have to work some magic! I’ve lost my marbles, just updated the recipe it’s 3 tbsp of each of the ingredients, and just 1 tsp vanilla, for the chocolate sauce on top!

I just made these and the flavor was to die for … however after I took them out of the fridge they melted … they did not set up for me at all. Any tips?

They should be stored in the refrigerator but weird that they aren’t staying together for you!!

Sorry they didn’t set up for you. Usually they set up fairly quickly in the fridge. You could try freezer blasting them!
