Every year I look forward to the day after Thanksgiving when Costco puts out their two pound tubs of peppermint bark. I buy that two pound tub just to make these cookies. And then I eat the rest in a matter of a week….and then have to go buy more. It’s a vicious cycle but these cookies are just too dang addicting.
You can use your favorite brand of peppermint bark or even the homemade kind, I just prefer Costco Kirkland brand. Then I just chop it into chunks and throw it into my favorite chocolate pudding cookies….because they are so fudgy and good.
Peppermint Bark Chocolate Fudge Cookies
Ingredients
2 1/4 c. flour
1 tsp baking soda
1 c. butter, soft
3/4 c. brown sugar
1/4 c. white sugar
1 small package instant chocolate pudding
2 eggs 1 tsp. vanilla
2 c. chopped Peppermint Bark
Instructions
In a small bowl combine flour and soda and set aside. In another bowl, cream together butter and sugar. Beat in pudding mix until blended, then eggs and vanilla. Add flour and soda mixture to wet ingredients. Stir in chunks of peppermint bark. Using a cookie dough scooper, place dough on a baking sheet lined with parchment paper. Bake at 350 degrees for 8 minutes. This is makes them slightly under-baked, but makes them nice and fudgy! Let them cool for 5-10 minutes before placing on a cooling rack. If you try to move too early, they might fall apart. Let cookies cool completely on cooling rack then store in air-tight container. Makes about two dozen.
