I’ve been in a lunch rut. Like, I don’t know what to feed my kids, don’t know what to feed myself, and don’t know what to feed my husband. Yep, I pack a lunch for my husband most days of the week (some days he does it!). But unfortunately a peanut butter and jelly doesn’t cut it. We both like to keep our lunches light and healthy, usually making a smorgasbord of a salad with whatever fruits, veggies, nuts, and protein we have on hand. And it gets old. I’ve been racking my brain for some better lunch ideas for both of us.
And while my kids would eat chicken nuggets, mac n cheese, or quesadillas every day if they could, I like them to get healthy, fresh lunches too as often as possible.
These Pesto Chicken Lettuce Wraps/Sandwiches came in for the win! Lettuce wraps for the adults, sandwiches for the kiddos. Win! Win!
A super easy pesto chicken salad made of shredded chicken, pesto sauce and yogurt is wrapped up in lettuce with sliced tomatoes and Sargento Reduced Fat Cheddar-Mozzarella Cheese. They’re easy to pack for Brett and super easy to assemble. Just pack the salad, the lettuce, tomatoes and cheese in separate containers or ziplock bags! They’re the perfect light and healthy lunch for both of us!
I took the same pesto chicken salad and made a sandwich with it for the kids. Owen’s not into tomatoes or lettuce, just cheese, so he got two slices of Sargento on his! He loved it! As long as there is cheese on it, he’ll eat it.
And for days we head to the park with our packed lunches, he’ll have our Pesto Chicken Lettuce Wraps and Sandwiches in towe! He liked the lunch box too much to let Brett pack his lunches in it:)
- 1/4 cup basil-pesto sauce (store bought)
- 1/4 cup + 2 tbsp nonfat plain yogurt
- 2 cups cooked and shredded chicken (can use rotisserie)
- 3 slices Sargento Reduced Fat Colby-Jack Cheese, cut in half
- 2 tomatoes, sliced
- 6 leafs of lettuce
- Salt and pepper to taste
- In a bowl combine pesto sauce and yogurt. Stir in shredded chicken. Season with salt and pepper.
- Spread a heaping spoonful of pesto chicken in lettuce leaf. Top with 2 sliced tomatoes and two halves cheese slices.
- Use whole wheat bread or rolls to make sandwiches for the kiddos!
