I have some of the best friends and neighbors who have been bringing us meals for the last two weeks! I couldn’t appreciate it more since I haven’t had the time, the energy, or the desire to even think about making dinner.
However, I’ve had no problem finding the time, mustering up the energy, or finding the desire to make a little somethin’ sweet. It’s kind of becoming a problem…this sweet tooth of mine…and I need to kick it.

These Popcorn S’mores combine the nostalgia of summer campfire s’mores and late night movies and popcorn, making the perfect summer time treat. I made these for my family to enjoy while watching a late night movie this week.
But you know my family consists of a two year old who was sleeping when said late night movie took place, and a two week old who only got his taste of popcorn s’mores in the form of some milk. So these were really left to just Brett and I. Brett, who has more self control than I know what to do with. Brett, who barely had a teeny tiny nibble of one of my popcorn balls.
And that’s exactly why I’ve got to kick this ravenous sweet tooth of mine.
These may not be festively red, white, and blue, but I think they’re a great treat to have around at your 4th of July Barbecue next week! That way, you won’t have to worry about consuming all 30 popcorn balls by yourself.
S’mores Popcorn Balls
Ingredients
1 cup light brown sugar, firmly packed
1/2 cup butter
1/2 cup corn syrup
1/2 tsp baking soda
10 cups freshly popped popcorn, cooled (don’t use air-popped, the kernels are too delicate for the hot syrup)
1 (10 1/2 ounce) package mini marshmallows
2 cups mini graham cookies (like Teddy Grahams)
1 cup chocolate chips
Instructions
Combine the brown sugar, butter, and corn syrup in a medium saucepan and cook over high heat for 5 minutes. Remove from heat and stir in the baking soda.
Combine the popcorn and the marshmallows in a large heat-resistant bowl. Drizzle the sugar mixture over the popcorn to coat it. Then gently stir in the graham cookies and chocolate chips, incorporating them evenly.
Let set until cool enough to handle. Form mixture into balls (golf-ball-size or slightly bigger. I made mine large enough to fit in cupcake liners).
Store in airtight container
makes about 15-30 popcorn balls (depending on size)
