Flavorful Roasted Red Pepper Sauce ready in minutes! {Scroll down for a giveaway}
I’m kind of on a roasted pepper kick. I’ll try not to overload you with everything roasted red pepper that I’ve been eating lately, but this Roasted Red Pepper Sauce I just had to share! I’ll be honest, I’m not a make-sauce-from-scratch kind of gal. Mostly because I like what’s quick. This sauce is half-way home made and is still super quick– like, ten minutes quick– which is totally doable for me.
It’s great with any variety of pasta, but I recently served it with Monterey Gourmet Foods Chicken & Cheese Rigatoni. Monterey Gourmet Foods has a variety of all natural pasta products to choose from but I played it safe for my kiddos and went with the rigatoni. They loved it! The Fresh Spinach & Cheese Ravioli is a safe bet too and one my kids also like. If your kids are a little more adventurous than mine, they have several internationally inspired pasta dishes you can try as well. I’m certain any of it drenched in this sauce would be amazing.
The fiery, chunky, roasted red pepper flavor added great depth to the rigatoni. I’d definitely say it’s a few steps up from your traditional jar of store bought pasta sauce (I know, because I use it all the time).
Owen’s my picky eater and I wasn’t sure he’d try the rigatoni with the roasted red pepper sauce (he thinks everything is spicy). But any time I let him help make dinner he takes much more interest in eating it. So he helped blend up the sauce and boil the noodles. His favorite part is dumping the noodles in the water. He yells “bombs away!” as he does it every single time. With a big bomb sounding explosion at the end. Such a boy.
The kid cracks me up.
Whip up this sauce and amp up your pasta dishes a little. And give some of Monterey Gourmet Foods dishes a try. You can find recipe inspiration on their Facebook page or visit their website to see a list of all of their products!
- 1 heaping cup roasted red peppers (juices drained)
- 1 can (6 oz) italian style tomato paste
- 1 can (8 oz) tomato sauce
- 2 tbsp chopped basil
- 1/2 tsp minced garlic
- 1/4 tsp onion salt
- 2 tbsp heavy cream or milk
- salt and pepper to taste
- Place roasted red peppers, tomato paste, and basil in a food processor and process until mostly smooth with small chunks of roasted red peppers. Spoon into a medium sauce pan. Add tomato sauce, basil, garlic, onion salt, heavy cream or milk, and salt and pepper. Cook over medium heat and let simmer for about 6-8 minutes. Serve over favorite pasta.
