Brett and I usually throw a fun Cinco De Mayo Party here with friends but this year we’ve got nothin’. At least not yet. But fiesta or no fiesta, we’ll still be eating some Mexican food on Sunday. Maybe I’ll whip up these simple Bean & Cheese Burrito Bites, or make some Mexican Hot Dogs (by request of the husband). He will definitely make his favorite guacamole, and we’ll probably need a little churro popcorn🙂
And it really wouldn’t be Cinco De Mayo if I didn’t eat my weight in chips and salsa. I made this Quick & Easy Salsa earlier this week and it’ll last us through the weekend (it makes a ton!) My mom has been making this stuff for years and we eat it on all things Mexican– dip our chips in it, eat it on nachos, tacos, enchiladas, salads. We love it.
But here’s the kicker…it’s made from a can of tomato juice. Tomato juice and a few seasonings simmered together for 10-15 minutes. Is that cheating or what?
- 1 (46 oz) can tomato juice
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic salt
- 1 tsp onion salt
- 1 tsp crushed red pepper
- 1 1/2 tsp cumin
- Pour tomato juice into a large pot and whisk in the seasonings. Bring to a boil, then reduce to a simmer. Let simmer for about 10-15 minutes.
- Best served warm with chips or over tacos, enchiladas, nachos, etc...
- The longer this simmers the thicker this salsa gets.
