The month of love is upon us…
I am 28 years old today…AND
I am 20 weeks pregnant! Half way there!
Which basically means I’m indulging! Want to join me?
Please, pretty pretty please make these cute little Red Velvet Cookie Sundaes….or uh…. what some people call Pazookies, and indulge with me.
Take a piping hot Red Velvet Cookie straight from the oven, a little under-cooked and gooey, and top it with a big scoop of the Blue Bunny brand Red Carpet Red Velvet Cake Ice Cream. (haven’t tried it? it’s a must!!)
The ice cream just kind of melts all over the cookie and you have yourself one decadent, indulgent treat!
The cookies by themselves are to die for. So at the very least, make these. Thank you Whipperberry for the easy recipe! But it was my husband who decided we needed to top them with red velvet ice cream. He’s such a thinker sometimes.
As he put it, “There’s no such thing as red velvet overload! No such thing!”
I might have to agree with him. If you’re looking to indulge this Valentine’s Day this is just the dessert for you and your honey buns. Or just anytime you feel like indulging. Believe me, you deserve this one!
Red Velvet Cookie Sundaes
Ingredients
1.75 qt Blue Bunny Red Carpet Red Velvet Cake Ice Cream
1 box Red Velvet Cake Mix
1 cup flour
2 sticks butter, soft
1 egg
2 cups white chocolate chips
Instructions
Preheat oven to 350.
In a large mixing bowl or stand mixer, beat butter until soft and fluffy. Slowly add the cake mix and the flour and mix until combined.
Add egg and mix completely. Then stir in white chocolate chips.
Form golf ball sized balls out of the dough (they will seem big) and place on a baking sheet lined with parchment paper.
Bake for 8 or 9 minutes and remove from oven. You want them to be a little under-cooked and a little gooey. Place hot cookies on serving dishes and top with a big scoop of Red Velvet Ice Cream.
*while the cookies are baking set the ice cream out so it softens just a little.
