Okay you guys! I’m obsessed with these Roasted Cauliflower Pizza Steaks! OBSESSED! Forget all the work of making a cauliflower pizza crust….just slice your cauliflower into steaks, roast them and top them with your favorite pizza toppings. I made these ones with marinara sauce (because I didn’t have pizza sauce), mozzarella cheese, toasted pine nuts, sun dried tomatoes, and some with pepperoni.
The sundried tomatoes and toasted pine nuts together are everything! I added the pepperoni mostly for Brett, but they are really good with either or, or both! The cauliflower steaks should be sliced about 1/2 inch thick, so they will take a good 20-30 minutes to roast in the oven to get them to your desired tenderness. Then after you add the toppings, just broil it all for a few minutes.
Full disclosure- my boys didn’t eat these. I made them pepperoni pizza quesadillas instead. Soooooo, there’s that! If you’re kids like cauliflower there’s a change they will love these too!!
It’s a new month and I’m kicking my butt into clean eating gear! Who’s with me?! We’ll be in Utah this weekend which is reaaaaally gonna make it hard, but I’m determined to stay on track! I miiiiight just have one swig cookie though. We’re headed there today for my little brother’s graduation! Kind of a last minute trip but we are excited to see family!
Roasted Cauliflower Pizza Steaks (with sun dried tomatoes + toasted pine nuts)
Ingredients
1 large head cauliflower
3-4 tbs extra virgin olive oil
8-10 oz pizza or marinara sauce
1 cup shredded mozzarella cheese
1/2 cup toasted pine nuts
1/4 cup sun dried tomatoes
pepperoni slices
salt and pepper
Instructions
preheat oven to 420
Remove the leaves and trim the stem off of the cauliflower. Place it stem-side down, and slice it once down the middle to divide it in half.
Slice each halve into two 1/2 inch slices. (save the end pieces for snacking later or just discard)
Line a baking sheet with parchment and lay the cauliflower steaks on the baking sheet. Drizzle olive oil over each of them, generously coating. Season with a little salt and pepper.
Roast for 20-30 minutes in the oven at 425, or until desired tenderness.
Remove from oven. Spread a heaping spoonful of pizza sauce over each cauliflower steak. Top with shredded mozzarella cheese, sundried tomatoes, pepperoni slices, and a sprinkle of toasted pine nuts.
Place back in the oven to broil for 2-3 minutes or until the cheese is melted.
Remove from oven and serve!
Notes
to toast pine nuts: heat a small skillet over medium heat. add 1/4 cup toasted pine nuts and saute for 2-3 minutes, gently stirring continuously until they've reached a golden color. remove from heat and set aside.
