I tried to grow some herbs in a few pots at the beginning of the summer. They died after two weeks. Even though I sometimes wish I had a garden to tend to and fresh veggies I could just run out back and pick for dinner, the reality of it is, it too would probably die. My herb pot project quickly proved I can’t for the life of me remember to water–a very crucial part of growing anything!
Then I just season it with some salt and pepper and toss in some feta cheese. It makes a great side to grilled chicken and sometimes I even mix in sliced grilled chicken just before serving. Simple and delicious.
Wait ’til you see the zucchini dessert that’s currently sitting on my counter, staring at my face, begging me to grab a fork and dig in.
