Making a special breakfast on Valentine’s Day is a simple way to tell someone you love them. It’s a kind and genuine act of service. If you are looking for something different and something that will really knock their socks off tomorrow morning, give these Red Velvet Waffles a try.
The waffles are thick and dense and loaded with chocolate chips. Feel like you’re eating dessert for breakfast. A great way to start the day!
I made a sweet cream cheese maple syrup to drizzle over the top and of course, loaded on the whipping cream, and topped with more chocolate chips.
Too rich for breakfast? These would also be a great V-day dessert.
Red Velvet Waffles
Ingredients:
2 eggs
1 1/2 c. flour
2 tbsp. sugar
3 1/2 tbs. cocoa powder
5 tbsp. shortening
1 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. buttermilk
1/2 c. milk chocolate chips
1 tube red food coloring ( i used gel)
Instructions
Beat the egg whites until stiff and set aside.
In a medium sized bowl stir dry ingredients together. Add egg yolks, milk, and buttermilk to dry ingredients and mix until combined.
Stir in red food coloring, then beat in shortening. Fold in the egg whites. Stir in chocolate chips.
*if batter seems too thick, add a little more milk until it reaches the consistency you like.
Pour into well greased waffle iron and cook for about 5-7 minutes (could be different depending on your waffle iron). Serve with syrup, whipping cream and a few more chocolate chips;)
Cream cheese maple syrup:
4 oz cream cheese
1/4 c. maple syrup
2 tbs. heavy cream
Instructions
In a microwave safe bowl, heat the cream cheese until almost melted. Stir in maple syrup and cream.
