This Shaved Brussels Sprouts Salad is the perfect salad to kick off the New Year with!
Merry Christmas friends! I hope you all had the best holiday with the people you love. Ours was low key and lazy and just how it needed to be! I ate way too many treats and am ready to to clean up my diet. This Winter Detox Shaved Brussels Sprouts Salad will be on repeat (or at least a once a week thing) to help me get lots of greens, antioxidants, healthy fats, and fiber!
It’s chalk full of good stuff- shaved brussels sprouts, kale, cauliflower, apple, avocado, pomegranate pearls, green onions, and a little feta. And tossed together with a simple Lemon-Maple Tumeric dressing.
This Shaved Brussels Sprouts Salad is fresh, crispy and crunchy, sweet with a little bit of savory.
I just looove it! I wasn’t sure I would like raw, shaved brussels but ever since I made Lisa Allen’s Brussels Sprout Salad I’ve been obsessed with them. I’ll just have both salads on repeat through the New Year!
Since I’m prego, I’m not doing anything drastic for the new year as far as detoxing my diet, just really trying to fuel my body with whole foods, less junk and less processed sugar, and drinking lots and lots of water. Salads like this for lunch with and dinner with a lean protein is ideal!
Winter Detox Shaved Brussels Sprout Salad
Yield 4-6
Ingredients
1 package shaved brussels sprouts (trader joes)
1 cup finely chopped cauliflower
1 cup baby kale
1 small apples or 1 large, diced
2 green onions, chopped
seeds from 1 pomegranite
1/3 cup crumbled feta cheese (optional)
salt + pepper to taste
Lemon-Tumeric Dressing:
6 tbs olive oil
4 tbsp maple syrup
juice of 2 lemons
1 1/2 tsp tumeric
dash of s+p
Instructions
Toss everything but the dressing ingredients together in a large bowl.
Whisk dressing together in a separate small bowl.
Drizzle as much dressing as desired over salad and toss until even incorporated. Serve immediately!
