I got this recipe from my sister-in-law The Girl Who Ate Everything. It’s a Denney family favorite, made by our mother-in-law Sheri. I’ve had her Pumpkin Bread before and it’s soo good I can’t believe I’ve never made it, or that I don’t even have the recipe on hand–especially considering my obsession with pumpkin.
Rather than making bread loaves I just poured the batter into muffin tins. My husband and I are going on a little road trip this weekend and I figured muffins would travel better and be easier to eat.
We are driving down to Vegas to run the Las Vegas Ragnar Relay. We get to spend 24 hours in a suburban with our sweaty, stinky friends, getting no sleep, and rocking out to good tunes. Sounds like a party right? There’s 12 of us, 2 vans, each of us run 3 legs, and we run 200 miles as a team in 24 hours.
Somehow, I turned my 6’5″, 240 lb, football playing husband into a runner. I’m running a total of 18 miles and he’s running a total of 16….and then he might never want to run again. When he finished his first 6 mile run the first thing he said was, “That was stupid.” I wonder what he’ll have to say after he finishes 16?
This is also the first time I’m leaving my little guy. We’ll be gone 3 days. I might have an emotional breakdown at some point. I’ll be needing comfort food.

Seriously how did you make him a runner. My dream is for John to run a marathon with me someday but I don’t see it happening. Your pictures are amazing!
