After a week full of sweet and indulgent treats, I thought we could all use something on the lighter side today. This zesty Lemon Garlic Chicken is just that, and is really too easy for words. It’s great served with some brown rice and veggies or sliced up and served over a fresh bed of greens, your favorite toppings, and a Lemon Vinaigrette like this one.
We eat a lot of salads around here, so typically at the beginning of each week I cook a ton of chicken in the slow cooker, shred or slice it up, and make salads with it all week long. My husband packs a lunch to work every day (okay, I pack it) and 98% of the time he takes a salad. I know, he totally eats like a girl really healthy. So this Lemon Garlic Chicken is perfect for adding variety to them!
But again, it’s great served warm with some rice or pasta.
Slow Cooker Lemon Garlic Chicken

Ingredients
- 4 boneless, skinless chicken breasts (thawed)
- 2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp + 1 tsp butter
- 2 tbs + 2 tsp chicken broth (or water)
- 2 tbsp fresh lemon juice
- 1 1/4 cloves garlic, minced
Instructions
- Mix oregano and salt and pepper together in a small bowl. Rub seasoning on both sides of chicken breasts.
- Melt butter in a skillet over medium high heat. Brown both sides of the chicken breasts then place in the crock pot.
- In a small bowl whisk chicken broth (or water), lemon juice and minced garlic together and pour mixture over chicken.
- Cook on high for 3-4 hours or low 4-6 hours until chicken is cooked through.
