{Super Easy} Apple Pie Sandwich Cookies & a Duncan Hines Giveaway!

 
 
 

A few weeks ago Duncan Hines sent me some samples of their new fall and holiday-inspired Frosting Flavor Creations.  They have all sorts of fun flavor mix-ins for frostings– cotton candy, mint chocolate, orange cream, cherry vanilla, and new seasonal holiday flavors like apple pie and peppermint stick.  Have you tried them? I used the apple pie flavor creation to make these super easy Apple Pie Sandwich Cookies.

 

I figured I’d keep things really simple {after all, isn’t that the point of using canned frosting} and used a Duncan Hines Spice Cake Mix to make the cookies and then just sandwiched them together with the apple pie frosting.  It doesn’t get much easier than that!  I have no problems using a cake mix or pre-made frosting when it tastes this good, especially when I’m looking for a quick and easy treat to make. And they really do taste like apple pie in a cookie. 
 

 

For the cookies just add two eggs and some oil to the spice cake mix, roll into one-inch balls and bake. Then, just mix your flavor packet into your frosting “starter” and spread a thick layer between two cookies.

 

Apple Pie Sandwich  Cookies
 
Ingredients
1 Duncan Hines Spice Cake Mix
2 eggs
1/3 cup oil
1 Duncan Hines Frosting Flavor Creations Frosting Starter
1 packet limited edition Duncan Hines Apple Pie Frosting Flavor Creation
Instructions
Preheat oven to 350.
In a large bowl combine cake mix, two eggs, and oil and mix until combined.  Roll dough into one-inch balls, place on cookie sheets lined with parchment paper and bake for 8-10 minutes.  Remove and let cool completely.
Stir apple pie flavor packet into the Frosting Flavor Creation Starter frosting.  Spread a thick layer of frosting in between two cookies and sandwich together.
