Perfect sugar cookies are usually a labor of love. Not these ones. They are the perfect go to when you’re craving a delicious, soft sugar cookie but don’t have the time or energy to make them from scratch. Or they’re just great for a last minute treat you need to take to a dessert night, party or get together with friends.
We took these up to a friends’ cabin a couple of weekends ago and no one knew they were from a cake mix. So don’t feel like you have to let the secret out;) Just watch them vanish from the plate.
You can keep them really simple by using store bought frosting or put just a little bit of love and labor into them and make homemade frosting. **I highly recommend this–after all, frosting takes just a few minute to make and really makes the cookies taste home made. I used an almond buttercream frosting but you can use any favorite frosting recipe for these.
Cake Mix Sugar Cookies
Ingredients:
1 box French Vanilla Cake Mix (or you can just use a white cake mix- I like the French Vanilla)
2 eggs
1/3 cup vegetable oil
Instructions
Preheat oven to 350.
Mix everything together and scoop heaping spoonfuls onto a baking sheet lined with parchment paper. Bake for 9-11 minutes. Let cool for 1-2 minutes before removing to a wire rack. Let cook completely before frosting. Cookies should be soft so make sure you don’t over-bake.
Easy Almond Buttercream Frosting
Ingredients:
1/2 cup butter, soft
5 tbsp milk
1 tsp almond extract
3 1/2-4 cups powdered sugar
Instructions
Cream butter until fluffy. Beat in milk and almond extract. Slowly mix in powdered sugar. Beat until creamy. (Add more milk to reach desired consistency)
Frost a thick layer onto cookies and enjoy. Add food coloring to your frosting or sprinkles to your cookies if desired.

I have been making these for years. For a change try an orange or lemon or pineapple cake mix, or take the vanilla, add peanut butter for peanutbutter cookies, or just add chips and nuts for choc. chip cookies. Very versatile.
