Chocolate cake is one of my favorite desserts. Simple yet oh so satisfying. A while back, we went to dinner with a big group of friends and even though we had a reservation, ended up waiting for about 45 minutes to be seated.
We were all too busy talking and catching up to notice how long we had waited, but our server and the manager apparently felt really bad. They brought us endless amounts of appetizers, refill after refill on our drinks, and after our meals came, they brought out about 10 different desserts for us to try.
I went straight for the chocolate cake. Our server must have heard me mmm-ing and aww-ing over how good it was (or simply saw how quickly it disappeared) because before we left she came to me and said, “If you liked that chocolate cake, I’ve got the best recipe for you to try. Even better than ours.”
Ummm….yes please?
I gave this nice server my email address and a few days later I had this Texas Sheet Cake recipe in my inbox.
Sheet cakes are meant for large crowds, and even though we made this for my birthday shin-dig with friends, there was still a lot of cake leftover. A lot of chocolate cake that I never should have been left alone with.
It is to die for!! It’s buttery, rich, and perfectly moist. Best of all, it’s a piece of cake to make.
Texas Sheet Cake
Ingredients:
2 sticks (1 c) butter
1 cup water
4 tbsp cocoa powder
2 cups flour
2 cups sugar
1/2 tsp. salt
2 eggs
1 tsp. baking soda
1 tsp. vanilla
1/2 cup sour cream
Instructions
In a large saucepan or pot melt butter; add water and cocoa powder and bring to a boil.
Remove from heat and beat in, flour, sugar, salt, egg, baking soda, and vanilla. (I just used a wooden spoon for this)
Gently stir in sour cream, do not over mix.
Pour into greased cookie sheet pan with sides at least 1/2 inch sides. Bake for 20 minutes at 350 degrees:
Chocolate Frosting
Melt:
1 stick (1/2 c) butter
4 tbsp cocoa powder
6 tbsp milk
Remove from heat and add (mix well):
3 1/2 cups powdered sugar
1 tsp. vanilla
Pour hot frosting on cake. Add 1 cup of nuts if desired.

I’ll have to try this. The recipe I have is from Lisa’s 8th grade (?) home-economics class. It uses buttermilk in both the cake and the frosting, and it is goooooood. I might have to experiment and see how the two compare ๐
