I’ve scheduled my c-section for June 12th, so unless this baby does a little flip and is no longer breech, I’ve got five weeks left of pregnancy! I will admit having another boy has made prepping for this baby really easy….
I haven’t been shopping for baby clothes once! Just baby shoes. But Owen got a matching pair so I felt justified in buying them.
I’ve got a few things left to do to finish up the nursery and Owen’s big boy room, and I’ve still got some deep cleaning and organizing to do, but overall, I think we are ready. And I think we’ve got everything we need.
Well, except for a new car seat. Did I ever tell you a squirrel got trapped in our garage and chewed through the straps, the fabric, and the foam of Owen’s perfectly good infant car seat completely destroying it?
Yeah, it happened. And every time I think about ordering a new one I get so mad about the stupid squirrel that I just don’t. But I guess it’s about time to get over it and just order one.
Just writing about it gets me all grumpy.
So let’s talk about this Tomato Basil Quinoa Salad– because I’m in love with it and it makes me so much happier. Good food is like an endorphin ya know….puts me in a goood mood.
I’m not sure I’ll ever get sick of tomato and basil together. And quinoa– I’m kind of obsessed with it too. Tossed together with chopped spinach, white beans, and drizzled with a Lemon-Garlic Balsamic Vinaigrette, this salad makes my tastes buds sing.
Tomato Basil Quinoa Salad
salad ingredients:
2 c. prepared quinoa
1 can navy or white beans, drained and rinsed
3 1/2 – 4 c. diced tomatoes
2 c. spinach, roughly chopped
1 c. basil, finely chopped
dressing:
2 tbs Balsamic Vinegar
1 tbsp Extra Virgin Olive Oil
zest of one small lemon
2 tsp minced garlic
salt and pepper to taste
Instructions
In a small bowl, whisk dressing ingredients together and set aside.
In a another medium bowl, mix quinoa, beans, tomatoes, spinach and basil together. Drizzle dressing over the top and toss to coat evenly.

I had a neighbor who had all of her baby clothes in plastic bins in the garage. A mouse got in, and ate through the plastic and then ate holes in the clothes. Those darn critters!!
But this salad looks amazing !!
