If you need a last minute healthier appetizer for the Super Bowl, I’ve got it for you! Chunks of avocado lightly seasoned with salt and pepper, wrapped in turkey bacon, and broiled to hot and crispy perfection. Sounds like a winner no?
You can of course use real bacon. But we opt for turkey bacon around here. We’ve been eating it for so long that it has become the new normal for us. Like, I kinda can’t remember what real bacon tastes like. Some might see that as a problem. Anyways, that is aside from the point. The point is, use whatever kind of bacon you want.
I do like using turkey bacon because it’s a little thinner than normal bacon, so it wraps up easily and crisps up nice and quickly in the oven! I’m kind of wishing I would have shoved a water chestnut in there with the avocado though, to give them some crunch. So maybe you can get a little more creative with these.
And maybe you’ll come up with an awesome sauce to dip these in, I just used bbq sauce, and it was great with these. Seriously one of the quickest little appetizers to throw together for the game on Sunday, or any party for that matter!
Happy weekend and happy Super Bowling this Sunday. {It also happens to my big three–ooo!} Yeah, tell me about it…
- 1 large avocado, peeled, pitted and diced into 12 large pieces
- 12 slices turkey bacon
- salt & pepper
- Preheat oven to broil (500).
- Season avocado pieces with salt and pepper. Wrap each avocado piece with a slice of bacon and secure with a toothpick. Place on a broiling rack (or a baking sheet with a wire cooling rack placed on it). Broil for 10-15 minutes until desired crispness of bacon!
