One of my favorite blogger’s Katie, from Yes, I want Cake lost her sweet mother on Mother’s Day. My heart breaks for her. If you read Katie’s blog, you’ve read about her adventures in food and fitness, but also in motherhood. The joy and excitement she finds in being a mom is inspiring and makes me want to be a better mother.
To think she has lost her own mother at such a young age is heart-wrenching. Even though we just celebrated Mother’s Day, I feel an even greater sense of gratitude for my own mom. Visit Katie’s blog and read her beautiful tribute to her mother and send her words of encouragement and love!

These Turkey Taco Burgers were a great change up to our weekly Taco Tuesday night. We were getting slightly bored with taco salads and fajitas. They are as easy as mixing a packet of taco seasoning into your ground turkey (or beef), making hamburger patties, and grilling them up! Then just top with your favorites; lettuce, avocados, onions, tomatoes, and of course some cheese….
The addition of a simple Green Chile Sour Cream sauce gave the burger a little spice and flavor! You could also pile on a heaping spoonful of salsa.
I loved the Mexican flavors of this burger, it’ll be perfect for summer grilling and makes for a very quick week-night meal!
Turkey Taco Burgers
For the burgers:
1 lb ground turkey, thawed (or ground beef)
1 packet Taco Seasoning
salt and pepper
4-6 slices of Cheddar or Monterrey Jack Cheese
4-6 whole wheat hamburger buns
Toppings: sliced tomatoes, sliced avocado, sliced onion, lettuce.
Green Chile Sour Cream Sauce
In a small bowl mix together:
1/2 cup reduced fat sour cream
3 tbsp diced green chiles (mild or hot)
1/2 tsp cumin
salt and pepper to taste
Instructions
In a large bowl mix ground turkey, taco seasoning, and a dash of salt and pepper until well combined. Form 4-6 patties and place on a hot grill. Cook until cooked through or until desired done-ness, flipping once. Top each patty with a slice of cheese and leave until melted.
Spread about a tablespoon of sour cream sauce on the hamburger bun, then assemble burgers with toppings of your choice. Add a spoonful of salsa if desired!
makes 4-6 burgers (depending on size)
