Buffalo Chicken Cheese Bites {more Super Bowl Food}

 

I’ve got Red Velvet on the brain today and can hardly think straight long enough to tell you about these delicious Buffalo Chicken Cheese Bites. I’ve got so much of it sitting on my counter it’s consuming my every thought.   

Just one more cookie.  One teeeeny tiny slice of cake. Seriously, Kristy. Focus.  Think cheese bites. 

Your Super Bowl party this Sunday won’t be the same if these don’t make an appearance. The men, well, they will love you.  What guy doesn’t like anything resembling the flavors of buffalo chicken wings? 

And if you are like me, you will enjoy them just as much as the boys.  In fact, I’ll probably be enjoying these more than game itself.  Who do we have playing again?

Let’s be honest, I’m there for the food!

Buffalo Chicken Cheese Bites
 
Ingredients
2 chicken breasts, cooked and shredded
1/2 cup Frank’s Red Hot sauce
4 oz. cream cheese, softened
1 1/2 cup sharp cheddar cheese, shredded
a Sprinkle of blue cheese crumbles (about a 1/4 a cup)
a dash of salt, pepper, and garlic salt.
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups bread crumbs
Directions:
Preheat oven to 350F. Line a baking sheet with parchment paper or lightly grease; set aside.
Place shredded chicken in a medium-sized bowl. Mix in hot sauce, cream cheese, cheddar cheese,blue cheese, salt, pepper and garlic salt, until combined.
With a small cookie scoop, scoop mixture out and roll into balls.
Place flour, egg, and the bread crumbs in three separate bowls, arranged on the counter for dipping.  Roll each ball in the flour, then the egg, then the bread crumbs, until coated well.  (Your hands will get messy). Place each ball on the repared baking sheet.
Bake for 20-25 minutes, until golden brown. Serve with more Frank’s sauce, ranch dressing, or blue cheese.
Makes about 2 dozen cheese bites.
*When short on time, you can use a 12.5 oz can of chicken breast, drained. I use the canned chicken from Costco all the time. It tastes great and is a great time saver.

    I am pretty sure I could eat all 24 of those bites myself. Your B-day looked delicious! Why is red velvet cake so good?? Have you ever had the red velvet frozen yogurt? mmmm…divine.

    I have never had this but it looks so so good, i am bookmarking and make them once i know if we get this red hot sauce.

    Wow, Kristy, another winner! Eventually I’m going to have to try ALL of your recipes. :-)

    This is definitely a keeper. I made a half recipe since it’s just the two of us. I used fat-free cream cheese, didn’t have bleu cheese on hand, and used panko breadcrumbs which made them extra-crisp! I also found that after 25 mins. they weren’t golden yet, so I switched to broil for about 4 mins. Perfect!

    This will probably become a new Super Bowl tradition in our house, and I will proudly serve them at other parties, whether I’m hosting or not. Would love for it to eventually become known as “Mo’s Signature Appetizer”, and if folks ask for the recipe, I’ll always link back here of course.
