I’ve been in a major dinner rut. That’s why you’ve seen nothing but snacky, desserty foods this week. We do eat dinner, but lately I can’t find the motivation/inspiration to make anything that’s been worth blogging about. But guess what, a lot of our dinners are nothing fancy–the kids get quesadillas and Brett and I throw together an “everything we have in the fridge” kind of salad.
Well, good thing it’s the weekend and you’re all looking for something sweet to snack on! Next week, I promise to make a notable dinner.
This Honey Almond Butter Popcorn is made popcorn, coconut oil, honey, almond butter, and a dash of cinnamon and vanilla! Healthy in my book. And perfectly fine to devour the entire batch.
It’s bursting with flavors of both honey and almond butter. I like to use crunchy almond butter to get a little crunch in the popcorn too! You can probably tell this isn’t a thick and gooey popcorn, if that’s what you’re going for though, just use a little less popcorn.
- 4 cups popped popcorn
- 1 tbsp coconut oil
- 2 tbsp crunchy almond butter
- 3 tbsp quality honey
- pinch of cinnamon
- 1/4 tsp vanilla
- place popped popcorn in a large bowl.
- melt coconut oil, almond butter, honey, and cinnamon together in a small saucepan over medium heat. whisk until melted and smooth. whisk in vanilla and remove from heat. drizzle over popcorn and gently stir until evenly coated. enjoy!
- **if you want a thicker, gooier popcorn, reduce the amount of popped popcorn by 1/2-1 cup
