Peanut Butter & Chocolate Marshmallow Cookies

You know what today is? A lousy, rainy, cold day.  It’s after noon, my baby is napping,  I am still in my sweats, and have yet to shower.  I might as well bake up some cookies, park it on the couch, and call it a day. 
I might have to squeeze in a shower just before Brett comes home, you know, to appear to have been productive:)  And I should probably save him a cookie or two.   

I first saw Chocolate Marshmallow Cookies  over at Me Oh My and at Food.Com, and knew I wanted to make them.  But then I saw  Peanut Butter Marshmallow Cookies at Tasty Kitchen and the choco-peanut-butta lova in me told me to combine the two.  So I did.  And they were heaven. 

I think I need more today.  

Peanut Butter & Chocolate Marshmallow Cookies
½ cups Butter
½ cups Peanut Butter
½ teaspoons Baking Soda
½ teaspoons Baking Powder
½ cups Sugar
½ cups Brown Sugar
1 whole Egg
½ teaspoons Vanilla
1-¼ cup Flour 
15 large marshmallows cut in half
Chocolate Frosting (recipe below)
Preheat oven to 375. 
Combine the butter and peanut butter. Mix until creamy. Add baking soda, baking powder, sugar and brown sugar. Beat in the egg and vanilla. Slowly add the flour.
Roll dough into 1″ balls and line them on a baking sheet lined with parchment paper.
Bake for 6 minutes, remove from oven and place half of a marshmallow (cut side down) on each cookie and lightly press into cookie.  Bake for another 2-3 minutes.  Let cool completely before frosting.
Chocolate Frosting:
1 cup sugar
1/4 cup milk
1/4 cup butter
1/2 cup milk chocolate chips
In a sauce pan combine sugar, milk and butter.  Bring to a boil, stir and remove from heat.  Add chocolate chips to hot mixture and let cool, stirring occasionally.  Frosting will come together as it cools.
Spread over cookies.
I like to make the frosting while the cookies are cooling so even though the cookies have cooled completely, the frosting is a little warm when I frost the cookies.  The warm frosting makes the cookies practically melt in your mouth!  But they are still great when they have cooled completely.

    Sounds like my life when I don’t go to work. Sweats are the best! And then when the honey calls to tell me he is on his way home I start the mad-dash scramble to get the house and myself looking presentable. Oh well. At least the cookies would win him over. I love s’more of anything s’mores.

    I made them and they turned out good, exempt the marshmallows did not really melt. They just kind of roasted, so it was hard to spread the frosting over them.
