Soft and chewy Brown Sugar Cinnamon Coconut Oil Cookies! My favorite to make around the holidays!
Brett and I just enjoyed a weekend babyboon/staycation and as much rest as I got (we seriously ate and slept so much!) I woke up feeling under the weather today. Stuffed up, headache, and still soooo tired. As much as I want to stay in pj’s, watch Christmas movies and bake cookies today…..MONDAY calls. Ugg. But last week while Brett’s parents were here I whipped up these Brown Sugar Cinnamon Coconut Oil Cookies!
They are one of my favorites to make around the holidays! Soft and chewy, sweet and cinnamon-y with a hint of coconut! Almost like a snickerdoodle, but not quite a snickerdoodle. Promise you’ll love ’em!
I attempted a paleo version last week too, but it flopped. So maybe sometime this week I’ll attempt it again. But at least these are made with coconut oil- good healthy fat for ya! Let’s call them healthy mmmkay!

Brown Sugar Cinnamon Coconut Oil Cookies
Yield 18 cookies
Ingredients
1/2 cup coconut oil
1 cup brown sugar
1 tsp vanilla extract
1 egg
1 1/2 cups flour
1/2 tsp baking soda
3/4 tsp baking powder
1 1/2 tsp cinnamon
pinch of salt
Instructions
Preheat oven to 350. Line a baking sheet with parchment paper.
In a stand mixer, beat coconut oil and brown sugar together until creamy. Beat in vanilla and egg.
Add flour, baking soda, baking powder, cinnamon and salt to the bowl then mix in until combined.
Scoop with a cookie dough scoop onto baking sheet. Bake for 9 minutes or until just barely golden on the bottoms. Remove and let cool for several minutes before transferring to a cooling rack. *best if you underbake just slightly!
Oh I would love to be as fearless as I once was as a kid, or actually as I once was before I had my daughter. Nowadays, I’m a little more reserved than I once was.

I hate to break it to you … but I just barely tired coconut oil over the weekend in some coconut/oatmeal/chocolate chip cookies. And I’m hooked. And I’m dying to buy some popcorn kernels and try it with that. I blame you š These look amazing, I think I’ll have to make them for the big game on Sunday!!

I just made these tonight. First time ever baking with coconut oil and it was a success!
So simply and delicious. I live in Hawaii, so the oil was liquid in my cabinet (no polar vortex here to keep it in its solid state) and I wasn’t sure if that would make a difference, so I put it in the fridge until it was solid again.

No need to cool down coconut oil, you can use it in its liquid form, it makes no difference in the cookies.

I just had to comment that these turned out delicious! I’ve used coconut oil on my hair and skin for years, but I am just now starting to incorporate it in to my cooking and baking. I was surprised by how good these were. My brother even enjoyed them and he rarely eats sweets! Thanks for sharing this recipe, it’s definitely going on my list of go-to cookie recipes!
I made these and substituted coconut palm sugar for the brown sugar and added 1/2 c raisins and 1/2 cup finely chopped walnuts. I used a tablespoon to dole them out and was able to get 4 dozen small cookies š

I just made these with white whole wheat flour! I had to add about 2 tablespoons of milk to make it into dough but they turned out GREAT!! Easy and delicious recipe! Thanks š

I wanted to say these cookies are amazing I made a batch last night but I added 1/2 a cup of sweetened shredded coconut to it an my husband ate them all making more to give as Christmas treats today

Made the cookies just now, not sure if I molded mine too big but my yield was 12 cookies rather than 18 cookies. They came out 3 shades darker than the ones in the picture. Aside from these differences, this cookie recipe is delicious! I made your other recipe for my family that came over from New York, and they loved them! I gave you all the credit so don’t worry. I hate to be a negative nelly but I found these cookies very disappointing. I made them late at night when I had a seeet craving and was in my pyjamas. Thank goodness they were just for me … I would have been embarrassed to serve them to anyone. They looked terrible and the taste was meh… I added extra cinnamon and nutmeg and cloves…still very boring.. thumbs down

Hi, just made a batch and it’s delicious. Not sure how it’s ment to be texture wise but mine was gooey and crunchy at the same time. Loved doing it with coconut oil, as you get the option to have the coconut flavor or unflavored. I added some fresh ginger and tumiric past, paired very well with the cinnamon. Sweet & Spicy. Making a second batch tomorrow.

Made these Almost exactly like recipe but also used coconut palm sugar. Mixed w a spoon and had to add a very little almond milk at the end for they were too dry. I ate 6 and my husband was beside himself over them! Added a few chopped walnuts because had some And melted the oil.
I made these with THC-infused coconut oil. Got me high AF. Delicious!

I made these cookies tonight and found them rustic and warming. I think they would go fantastically fresh out of the oven with a cup of coffee.
The top is very fragile while the bottom of the cookie is slightly caramelized and chewy. Very delightful.
The brown sugar makes a course texture that speaks of homemade, like I said, rustic and warming. Cozy! I might try later with bakers sugar to see what happens to the texture and flavor!
I would recommend adding the dry ingredients to the wet in a few installments. I had some clumping adding all at the same time.

Can regular granulated sugar be used successfully instead of brown sugar? We are in stay at home ordet.
I just made these and they are FANTASTIC! Iāve baked with coconut oil quite a bit. I love using it to make chocolate chip cookies. But these are hands down amazebells! Definitely having this as our new āhouse cookieā. My 7 year old son is over the moon about these! I should have tripled the recipe cause I think these wonāt last past today!
I just made these, and they are a great simple cookie! I used a mix of sugars (dark muscavado, Demerara, coconut sugar) to great affect. I think I will add a bit more salt (my pinch was too small I think).
