Hello lovely friends! I’m comin’ in hot on #tacotuesday with these Cauliflower Rice Taco Bowls. I’m obsessed! And yep, that’s a super easy Chipotle Lime Greek Yogurt Sauce that’s poured over the top 💃🏼
Ridiculously easy ✔️ Healthy ✔️ Lower carb ✔️ High Protein ✔️ Full of good fats✔️ Did I already say flipping delicious?! I just get so excited about easy, healthy dinners you guys. Dinners that hardly require a recipe that anyone can make and that actually taste good! You know? YOU KNOOOOWWWW!
And now, you can basically find raw, uncooked cauliflower rice at any grocery store (I usually buy it from trader joes or Costco) which makes this dish even easier to throw together.
If you’re feeding kiddos, make their bowls with regular brown rice instead of cauli rice OR a mix of both so they get the healthy carbs and the veggie!
These are so great for dinner, but also make really easy healthy meal prep for lunch. Just prep everything (the taco meat, cauliflower rice, and Chipotle sauce) at the beginning of the week, make sure you have lettuce, avocado, and tomato on hand and you have healthy taco bowls 4 out of 7 days for lunch!

Cauliflower Rice Taco Bowls
Yield 4 bowls
Ingredients
1.5 lbs ground turkey
3 cups raw cauliflower rice
1-2 tbs extra virgin olive oil or coconut oil
3 tbs taco seasoning
1 tsp garlic salt
dash of salt + pepper
1 (14 oz) can black beans, rinsed and drained
2 roma tomatoes, diced (or tomatoes of choice)
1 large avocado, pitted and sliced
1/2 head romaine lettuce, finely chopped
Instructions
Heat a large skillet with olive oil over medium heat. Add cauliflower rice, season with garlic salt and a dash of salt and pepper, and saute until golden and just tender. Stir frequently while cooking. Place the cauliflower in a separate bowl and set aside.
Place the pan back over the heat and add the ground turkey to the pan. Cook until cooked through. Drain any excess liquid. Return to heat, add taco seasoning plus 2 tbs water, stir and let simmer for a few minutes. Remove from heat.
Scoop about 1 cup of cauliflower rice into each bowl. Top with 1/2 cup ground turkey, 1/4 cup black beans, a few slices of avocado, shredded lettuce, and tomato.
Drizzle with Chipotle Lime Greek Yogurt Sauce (recipe below). Enjoy! Serves 4
Chipolte Lime Greek Yogurt Sauce
Ingredients
1/2 cup plain greek yogurt
1-2 small chipotle pepper (use 2 for extra spicy)
juice of 1 lime
1/4 tsp cumin
1/4 tsp garlic
dash of salt and pepper
Instructions
Place everything in a blender and blend until smooth. If it seems to thick, squeeze a little more lime juice in to thin it out a little!
