Cheesy Chicken Quinoa Bites! These are actually an oldie from the blog that I made again last week and was shocked how much my kids love them. Made we wonder why I haven’t been making them more often! The babies even went to town on these. Such a better alternative than frozen chicken nuggets (not to say my kids don’t eat those!) But these, the adults will love too. I let the boys dip these in ketchup or bbq sauce, and Brett and I dip ours in a little franks hot sauce mixed with greek yogurt! Serve with a side of veggies and dinner is done.
All that’s in them– quinoa, shredded chicken, cheese, an egg, milk, and a few seasonings. In the past I’ve added cooked and diced up veggies- broccoli is a good one to add! Either way you can’t go wrong. If you’re feeding a big family like ours, I’d double the recipe below.

Oven Baked Cheesy Chicken Quinoa Bites
Yield 15 bites
Ingredients
- 1/2 cup quinoa, rinsed
- 1 cup chicken broth ( I like to use better than bouillon to season water to make broth)
- 12 oz chicken, cooked and shredded (i used the canned chicken from costco, prob about 1 1/2 cups)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic salt
- 1/4 tsp cumin
- 1 egg
- 1/4 cup milk
- 1/2- 1 cup shredded cheese (any variety, more or less to your desired cheesiness)
- optional add 1/2 cup finely chopped and sauteed veggie (broccoli is a good one)
Instructions
Rinse quinoa and set aside. In a medium saucepan, bring chicken broth to a boil. Stir in quinoa. Reduce to simmer, cover and let cook for 15 minutes. Once done cooking, fluff with a fork and transfer to a large mixing bowl and let cool for 15-20 minutes.
Preheat oven to 375.
Add the shredded chicken, cheese, salt, pepper, garlic, cumin, and milk together. (if adding veggies, add those now as well). Once combined, scoop spoonfuls and roll into one inch balls and place on a baking sheet lined with parchment.
Bake at 375 for 15-20 minutes or until quinoa bites are golden. Remove from oven and let cool slightly before eating.
*Optional Franks Hot Sauce Dipping Sauce (or just use the Franks Sauce alone!)
combine 1/4 cup nonfat greek yogurt with 1-2 tbs Franks hot sauce and a pinch of garlic and salt and pepper!
