We had tons of fun soaking up the sun, eating great food, and spending time with great people at Lake Powell! I think I have a decent tan and what feels like 10 extra pounds to show for it.
I had a bundle of really really ripe bananas that I couldn’t let go to waste before we took off for the week, so I made these Chocolate Chip Banana Bread Cookies to take with us.
They disappeared fast.
There is just something about being on vacation at Lake Powell, where any attempt to eat healthy or (at least in moderation), goes right out the window the second you arrive. These babies were devoured, along with lots of other good eats while we were there.
They taste just like a soft, moist slice of banana bread loaded with chocolate chips!
Chocolate Chip Banana Bread Cookies
1/2 cup white sugar
1/2 cup brown sugar
1 cup butter, softened
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 ripe bananas, mashed
2 cups rolled oats
1 cup milk chocolate chips
Preheat oven to 375.
In the bowl of your mixer cream together the butter and sugars until creamy. Beat in the eggs and vanilla. In a separate bowl stir together the flour, baking soda, and cinnamon. Add to the creamed mixture and mix well. Mix in the mashed bananas, oats, and chocolate chips until well incorporated. Drop by rounded spoonful (or use a cookie scoop) onto a parchment lined cookie sheet and bake for 10 to 12 minutes. Cool on a wire rack.
