Obsessed with these Dark Chocolate Peanut Butter + Coconut Baked Banana Boats! Guilt free treat for the win!
Happy first day of February! Let me give you a super important (insert winky face emoji) quick life update….
- I’ve been washing my hair every four days and the only thing making it possible are these bangs of mine. They seem to hide all the grease/make me look somewhat put together even when it’s all just pulled back into a sweat-filled, greasy messy bun. Kind of grossing myself out thinking about it, but they say you have to train your hair so I’m freaking trying. Again. For the 100th time.
- Been living in this cozy Athleta Pose Wrap (it was on sale for $45 but no longer available online) and throwing it on over my gym clothes and looking put together. Goes right along with #1.
- Loving this tee. Maybe because I’ve always been a muscley, athletic looking girl and I’m finally appreciating my body and it’s strength more than I ever have, at the ripe old age of 32 (for just ONE more day). But it’s also loose and comfy and my jam.
- And lastly, these Dark Chocolate Peanut Butter + Coconut stuffed Banana Boats are life. And happenin’ eeeerrrry dang day this week. Guilt-free treat baby!
Please tell me you’ll make them! Dark Chocolate + Chunky Peanut Butter (all natural) + Unsweetened Coconut Flakes stuffed inside a banana and baked until warm, melt-in-your-mouth, amazingly good stuff.
The chocolate + pb comob is hands down my fav, but stuff whatever your heart desires inside the bananas. Use different nut butters, add fruit, chia seeds, granola! Get creative! And if you or someone in your house has a nut allergy (like my Owen does) USE COOKIE BUTTER!! Oh my gosh it’s so good. A couple of my other go-to combos for these dream boats are…..
*almond butter + toasted pecans + cinnamon + honey
*almond butter + blueberries + coconut + chi seeds + honey
These two combos are pictured too.
You can see I create a little “boat” out of the foil by crimping it around the banana–that will help keep the banana upright while it bakes. Slice the banana down the middle, spread the nut butter or cookie butter, and sprinkle in your favorite goodies. Add a drizzle of honey or dash of cinnamon to sweeten it up if it needs it.
Dark Chocolate Peanut Butter + Coconut Baked Banana Boats
Ingredients
- 1 banana
- 1 square piece of foil
- 2 tsp all natural chunky peanut butter
- handful Dark chocolate chips
- sprinkle of unsweetened coconut flakes
Instructions
- Leaving the peel on, slice the banana down the middle (but not all the way through). Place it on a square sheet of foil.
- Crimp the foil around the banana to create a "boat" to hold it upright.
- Pull the banana open just a little. Spread peanut butter down the middle of it. Top with a sprinkle of dark chocolate chips and coconut flakes.
- Bake at 375 for 10 minutes or until the banana is soft and chocolate melted.
Almond Butter Pecan + Honey Baked Banana Boat
Ingredients
- 1 banana
- 1 square sheet of foil
- 2 tsp almond butter (or any nut butter)
- 1 tbsp toasted pecans
- 1 tsp raw honey
- dash of cinnamon
Instructions
- eaving the peel on, slice the banana down the middle (but not all the way through). Place it on a square sheet of foil.
- Crimp the foil around the banana to create a "boat" to hold it upright.
- Pull the banana open just a little. Spread almond butter down the middle of it. Top with a sprinkle of toasted pecans, a dash of cinnamon and drizzle of honey
- Bake at 375 for 10 minutes or until the banana is soft.
Almond Butter Blueberry Chia Baked Banana Boat
Ingredients
- 1 banana
- 2 tsp almond butter (or any nut butter or cookie butter)
- 5-6 blueberries
- sprinkle of chia seeds
- drizzle of honey
Instructions
- eaving the peel on, slice the banana down the middle (but not all the way through). Place it on a square sheet of foil.
- Crimp the foil around the banana to create a "boat" to hold it upright.
- Pull the banana open just a little. Spread the almond butter down the middle of it. Top with a sprinkle blueberries, chia seeds, and a drizzle of honey
- Bake at 375 for 10 minutes or until the banana is soft and blueberries bursting 🙂
