Sometimes I feel like we live at Costco. It’s the kind of store we should only need to go to every couple of weeks, maybe even monthly. But not us, we are there weekly. We (well my children) go through milk like crazy and Brett and I burn through eggs like you wouldn’t believe, and we always seem to need more produce. What’s strange is we always seem to spend right around the same amount of money each trip. Even when we only need a few things extra bags of snacks and new “must tries” end up in our cart.
It’s a dangerous place to shop. And the sample always get us. I’m only slightly embarrassed to tell you that they were sampling this bean dip at Costco last week and I was like, whoa, we need everything to make that!
Turns out “everything” is a can of refried beans and some really good salsa. And I went ahead and added a little bit of cheese 🙂 Warm it all up and you’re dippin’ in minutes.
Did we really need an entire case of refried beans? Probably not. I’ll call it food storage. Or two giant things of salsa? Actually, yes, because we use it all the time now. It’s our new favorite.
So friends, you’re only three ingredients (or just a trip to Costco )away from making this dip. Of course, you can use any kind of refried beans and salsa you’d like! But don’t forget the cheeeeeese!!
- 1 (15 oz) can refried beans
- 3/4 cup mild salsa (I LOVE costco's Kirkland Organic Mild Salsa)
- 1/2 cup shredded mexican cheese
- Stir everything together in a small saucepan and heat over medium heat until cheese is melted and dip is hot!
- garnish with sour cream if desired, serve with chips!

I LOVE how simple this is! Just plain good stuff in there! And I totally agree – Costco salsa is delicious!

I’ve been making this same dip for years. It was given to me by a friend. Try using hot salsa or picante and sharp cheddar cheese. Makes it really good. You can make larger batches in a crock pot for tailgating for holiday parties.
