The foodie/food blogger in me (if I can even call myself that anymore) feels like I really let ya down with ZERO Thanksgiving recipes for you! Wah.Wah. I don’t know where my free, fun food making time goes ๐๐ถ๐ผ๐ถ๐ผBut I’m pulling through with this easy, tasty Apple & Avocado Spinach Salad cause everyone needs a good salad at Thanksgiving!
We are heading to Arizona to spend the week with my brother and his family, it’s been our tradition since we moved to San Diego four years ago. We’ve done everything from make a big Thanksgiving spread, gone out to eat, and made a really simply spread. This year we are trying to keep it simple. Turkey (maybe even just a ham), rolls, potatoes and a salad. And probably a pumpkin cheesecake from Costco!
This Apple & Avocado Spinach Salad with Maple Vinaigrette is so easy to throw together, full of simple fall flavors and would make a perfect Thanksgiving side! I’ve been eating it on the regular. I threw it together to take to a friends house a couple of weeks ago for dinner and we all loved it. Let’s be honest though, the spinach is just there for volume. I’d love to make a salad out of just the toppings- apples, avocado, glazed pecans, feta cheese, and green onion ๐ Drenched in the maple vinaigrette!

Easy Apple & Avocado Spinach Salad with Maple Dijon Vinaigrette Dressing

Ingredients
10 oz baby spinach
2 medium apples (i like honeycrisp), diced
2 ripe avocados, pitted and diced
3 green onions, diced
1/3 cup glazed pecans (yup, store-bought)
1/2 cup crumbled feta cheese
dressing:
3 tbsp avocado oil (or extra virgin olive oil)
1 tbsp apple cider vinegar
1 tbsp pure maple syrup
1 tsp dijon mustard
pinch salt + pepper
Instructions
Toss the spinach, avocado, apples, green onion, feta cheese, and glazed pecans in a large salad bowl.
Whisk together the avocado oil, maple syrup, apple cider vinegar, mustard, and pinch of salt and pepper together in a small bowl. Just before serving, pour over the salad and toss together. Enjoy!
