Dinner doesn’t get easier than four ingredients in the slow cooker! Your family will love this Slow Cooker Green Goddess Chicken
This summer we had a lot of wing-it kind of dinners and a whole lot of take out. I’m so ready for routines and schedules and meal planning! I’m not an intense meal planner/food prepper, I just like to have a rough sketch of what I’m making each week. And I’m just so excited to get into a groove of making dinner again and sitting around the table together. Quick, healthy dinners you guys. That’s my jam. And this Four Ingredeint Slow Cooker Green Goddess Chicken fits the bill.
And all five of my kiddos liked it. Yep- even baby nibbles for the babies!
To make it all you need is
- Chicken breast or tenders
- Trader Joe’s green goddess dressing. This stuff is made with clean ingredients, only has 20 calories per 2 tablespoons and has zero sugars. But SO much flavor! It’s sooooo good. If you can’t get your hands on some, use any green goddess dressing or you could even make your own.
- fire roasted green & red bell peppers (I also got these from Tj’s)
- marinated grilled artichoke halves (again, from Tj’s)
Everything goes in the slow cooker and you get to forget about it!! While you catch up on life after summer. Kidding because I still have two and half kiddos at home!
When it’s done cooking, just shred the chicken and whip up a tasty Green Goddess Chicken Bowl! Simply serve it over brown rice or quinoa, and top it with a little cheese and avocado! Simple and good guys.
But of course you could also serve this chicken over a bed of lettuce, make wraps with tortillas, or even do lettuce wraps.
4 Ingredient Slow Cooker Green Goddess Chicken
Ingredients
1 bottle of Trader Joe's Green Goddess Dressing (have an extra on hand to add more dressing to bowls afterward)
4-5 large chicken breasts (or 8-10 chicken tenders)
1 (12 oz) jar Trader Joe's Marinated Grilled Artichoke Halves, drained
1 (12 oz) jar Fire Roasted Red & Green Bell Peppers, drained
Instructions
Dump the artichokes and peppers into a colander to drain juices. Spread on a cutting board and lightly dice artichokes and peppers into smaller chunks (if desired).
Place the chicken, bell peppers and artichokes in a 6 quart slow cooker. Pour Green Goddess Dressing over the top and stir to combine. Cover and cook on low for 6-8 hours (or high for 3-4). Remove the chicken and shred (I like to place the chicken in the stand mixer and use the beater to shred it! Perfect every time!) Add the chicken back to the slow cooker and stir into the sauce.
Serve the chicken over brown rice, whole wheat pasta or quinoa. Top with a little shredded mozzarella cheese, or TJ's Quatttro Formaggio, sliced avocado, and a dash of salt and pepper!

So easy and so delicious! We served with crumbled feta, garbanzo beans and sliced Persian cucumbers for a Mediterranean flaire. Yum!
