Healthy Flourless Oatmeal Chocolate Chippers! And MINIATURE! I could die over all the miniature foods! Maybe it’s because it means I can eat two or three cookies to equate to one. But these are healthy my friends! Zero flour! And made with coconut oil, applesauce, and coconut sugar! All the gooooood things.
And oats, an egg, and baking soda and such. But you know that.
They’re bite-sized, cakey little cookies and I LOVE cakey oatmeal cookies. They remind me so much of the oatmeal cookies my mom used to make!
You’re gonna need a food processor to blend up some oats ‘cuz that’s the girth of these babies (if girth isn’t a word you know what i’m going for right?!) Other than that they’re easy peasy and I promise you’ll love. I can’t wait to make them again for my cute little 4 year old sunbeams I teach at church. {if they have a purpose- I can’t eat them all!}

Healthy Flourless Oatmeal Chocolate Chippers
Yield 16-18
Ingredients
2 cup oats
1/4 cup coconut oil, melted + slightly cooled
1/4 cup applesauce, unsweetened
1 egg
1/4 cup coconut sugar
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1 cup chocolate chips
Instructions
Preheat oven to 350.
In a food processor, blend 1 cup oats into an oat flour.
In the stand of a kitchenaid mixer, beat coconut oil, applesauce, coconut sugar, egg, and vanilla until creamy.
Add 1 cup oat flour and 1 cup oats, baking soda, powder, and cinnamon. Mix until incorporated. Stir in chocolate chips.
Scoop 1 inch balls onto a baking sheet lined with parchment. Bake for 9-10 minutes until just golden. Let cool for several minutes before transferring to a cooling rack.
