Whelp, all 12 of these No Bake Coconut Almond Butter Cookies were devoured in one night {last night actually}! But not before Graham ran off with the entire jar of almond butter, spoon-in-hand, and completely covered himself in it. I was in the middle of shooting these when I got a phone call and had to step in to the other room. He somehow drizzled almond butter over some of the tops of them. Little food stylist in training, ha!
These cookies though. Dangerous little chewy bites of healthy heaven. You know, kinda healthy….
Made with oats, coconut, almond butter, maple syrup (or honey), coconut sugar, and vanilla extract. That’s it! I used my Healthy Chocolate No Bakes to adapt these one. They are best chilled in the fridge, they get a little fudgy. So good you guys.
I’m off to a conference this weekend and I’m a little nervous…I don’t really know anyone and I haven’t been to a conference in years. Good news is it’s near the beach 🙂 Wish me luck!
- 1/4 cup natural almond butter
- 3 tbsp coconut oil
- 3 tbsp pure maple syrup (or honey)
- 2 tbsp coconut sugar (or regular sugar)
- 1/2 tsp vanilla extract
- 1 1/2 cups old fashioned oats
- 1/4 cup unsweetened coconut flakes
- Melt everything together (EXCEPT for oats and coconut flakes) in a medium saucepan over medium heat. Bring heat up just a bit and let begin to simmer. Let simmer for 45 seconds. Remove from heat and stir in oats and coconut flakes.
- Scoop by rounded spoonfuls onto parchment paper. Chill in fridge until ready to eat!
- makes 12-14 depending on size of cookies
